Why Mizen?

Mizen (pronounced "mai-zn") is the name of our product line featuring our in-house developed burrs, embodying our core beliefs and approach towards burrs. The name "Mizen" draws inspiration from the nautical term "Mizzenmast," symbolizing the vital role burrs play in the world of coffee grinders, akin to how the Mizzenmast is crucial for a ship’s stability.

As you may have heard, the mantra for achieving exceptional coffee is "grinder, grinder, grinder," and at the heart of a coffee grinder lie the burrs. We firmly believe that burrs significantly impact a coffee grinder's performance potential, making them an essential and key component in our pursuit of perfection!

What’s our design intention behind Mizen?

Mizen embodies our passion for coffee, our desire to pursue perfection, as well as our commitment to constantly learn more about coffee. We want coffee to express itself freely and authentically. Dedicated to appreciate the collective efforts of coffee farmers, roasters, and baristas from farm to cup, we designed Mizen burrs as a tool to showcase their collective efforts by bringing out the best in every coffee bean.

We have a strong preference for modern light roasts with complex, delicate flavors. We value high clarity and cleanliness in coffee, as these allow each unique coffee terroir to shine, enabling the coffee to express itself fully. While we may have our own taste preferences, our biggest ultimate bias is towards delivering delicious coffee. :)

Precision is also at the core of our values, which is why we go the extra mile to ensure our burrs are meticulously machined to be as precise and flat as possible through a series of dedicated processes, so that they will deliver in the cup. At times, this means returning to the drawing board again and again, until we get it right.

Our mission is to create burrs that deliver delicious coffee and allow the coffee to express its truest and most beautiful form.


Mizen 98OM - 98mm flat

This is the result of our yet another passion project. After about a year of testing and tasting, we’re pleased to share this with the world. The 98OM burrs are designed to provide a sweet, well balanced cup, with an approachable, clean, and juicy cup profile, paired especially well with modern light roasts. The acidity is elegant and delicate, typically supported by pronounced sweetness to integrate well with other flavour notes found in light roasts, enhancing the overall character of the cup without overpowering it. The Mizen 98OM burrs are an excellent multi-purpose burrs, capable of delivering astonishingly good coarse grinds for French Press, delicate complex V60s, and exceptional espresso.


Mizen 64OM - 64mm flat

Our goal for the 64OM burrs was to come up with an all-purpose 64mm burr set (hence the name OM, short for Omnipurpose) that excels in both fine grinding (e.g. espresso) and coarser pour-over grinding (e.g. V60, Kalita, Chemex etc) and produces tasty cups in those aforementioned use cases. Through adjustments to the popular cast burr teeth profile and the application of novel finishing processes through experimentation, we are proud to introduce you our take on Omni-purpose burrs.

When used for espresso and pour over, the 64OM burrs provide enhanced clarity in the cup, showcasing the flavours of the coffee terroir and processing, with a moderate degree of body and mouthfeel. The cup characteristics are generally clean and sweet to support and showcase the terroir notes.


Mizen 64ES - 64mm flat

An enjoyable espresso should be balanced, with perceived sweetness resulting from an even extraction, a velvety mouthfeel, and, most importantly, a pleasant robust finish accompanied by a lingering aftertaste. With these ideals in mind, we set out to pursue our ‘perfect’ espresso burrs.

The geometry of 64ES burrs initially draws inspiration from traditional-style aggressive cut burrs, which we expected to deliver intense, high body shots. Out of curiousity, we experimented with using grind bypass paths to modulate the coffee grinding dynamics. Although we couldn’t precisely isolate the impact of these grind bypass, we discovered that this burr design, when combined with our other manufacturing processes, imparted unexpectedly distinctive characteristics that we felt brought us close to that ideal espresso, and so we would like to share it with you!

When used for espresso, the 64ES burrs offer a coffee experience reminiscent of traditional-style espresso but with heightened sweetness, slight bump in clarity, improved balance, and a pleasing finish, all while minimizing bitterness.


Mizen 65CL - 65mm conical

The Mizen 65CL burrs are our new in-house developed omni-purpose burrs, designed to work optimally with the low RPM on LAGOM casa to deliver the ideal grind quality. It is versatile ideal for both espresso and pour-over brewing. They offer a balanced taste profile with medium-high clarity and moderate body, delivering more complexity and nuanced layers compared to smaller burrs, along with improved grind throughput.

In the cup, you may also detect more refined layers of flavor separation, along with a more elegant presentation of acidity. This general characteristic translates to both espresso and pour-over brewing, which makes the Mizen 65CL an excellent multipurpose burr.


Moonshine & Obsydian - 48mm conical

48mm burrs represents our initial venture (pre-Mizen) and our exploration into the impact of burr design on grind quality. With Obsydian burrs (now discontinued), we believe we had a unique set that surpassed the then-standard 38mm burrs in terms of tastiness while enhancing the clarity compared to conventional conical burrs. The distinctive black color finish of the coating inspired the name "Obsydian."

The Moonshine is our new propietary processes that we’re experimenting with, which eventually replaced the Obsydian burrs – it is an improved burrs manufacturing process based on our experience from Obsydian burrs. During the burrs manufacturing phase, we have added polishing steps - resulting burrs that looked extremely polished and shiny, like moonlight – hence the inspiration of the name.

In our hand, the Moonshine burrs shine in filter-brewing, but also excel in espresso - the brew profile tends to taste cleaner, with high clarity, acidity is elegant and appears to be sparkly/brighter and yet complex, which pairs well with high quality light roasted coffee.
